Considering that the United States is the wealthiest nation in the world, Yale graduate students Nilofer Ahmed and ZoĆ« Lloyd found it odd that such a rich country could rank 34th in world life expectancy. The reason? What we eat. And why do we eat what we eat? Because we think we don't have time to do better. 

That's how the business partners came up with Kitchen Table, a frozen food kit that gives you everything you need to create a healthy, plant-based meal in less than 20 minutes. The kits will be found in retail outlets' frozen food sections. Each one will contain two servings of prepped, chopped vegetables, whole grains, proteins and spices, plus a recipe for how to serve them up. The frozen format has the added benefit of maintaining its nutritional value longer than many fresh products, as it's frozen when it's just been picked and most full of vitamins and minerals. Plus, it's shelf life is definitely prolonged from other fresh foods. 

The $14 billion-dollar frozen food market is already growing at about two percent a year, thanks to more organic, natural offerings, said Ahmed and Lloyd. They plan to jump into it this fall. After a summer spent in the product development stage, Kitchen Table will launch its first kits in local Northeast stores and expand from there.
